A chair that's slightly wrong is a return. A booth that's slightly wrong is a construction problem. Booths get ordered against real walls, real window sills, and real HVAC chases, which is why we start every booth quote with a dimension check (lengths, back heights, seat depths, and how the table line meets the seat) before we talk fabric.
We supply stock singles and doubles when the layout is standard, and custom-built banquettes when it isn't. The price gap between those two is smaller than most people expect, and the lead-time gap is bigger.
